If you think your microwave is just for popping popcorn, reheating leftovers or cooking frozen dinners, then you are missing out on some of the wonderful dishes that you can make right in the microwave. Since it takes only minutes to prepare most dishes in the microwave, cooking in it is a great option for a warm breakfast, quick lunch or fast supper. Here are four recipes that are delicious when cooked in the microwave.
Meatloaf in a Mug
There is no need to give up your favorite comfort foods when you are preparing meals only in a microwave like those available from companies like Capital City Appliance. You can easily make meatloaf in your microwave. Start by combining two tablespoons milk, one tablespoon ketchup, two tablespoons quick-cooking oats, one teaspoon onion soup mix and 1/4 pound hamburger in a mug. Cover and cook for three minutes until the internal temperature reaches 160 degrees. Drain off the fat and enjoy.
Chicken Fajitas
If you are hungry for some great Mexican food, then you can make chicken fajitas in your microwave in less than 15 minutes. Start by slicing up half a red and green bell pepper along with half a white onion. Place the pieces in a two-quart microwave-safe bowl with a lid. Add two tablespoon Southwest seasoning blend and stir until all pieces are covered. Cut one chicken breast into four long strips and cover with one tablespoon of the seasoning blend. Lay the chicken strips on top of the vegetable pieces and microwave for 11 minutes. Serve with tortillas, salsa, and sour cream.
Sole
It is easy to make some in the microwave. Start by stirring together three tablespoons softened butter, one teaspoon grated lemon zest, two teaspoons white horseradish and ¾ teaspoon Dijon mustard in a small bowl. Lay four six-ounce sole fillets in a microwave-safe bowl. Place half of the butter mixture in the middle of each one. Then, fold the sole in half. Top with remaining butter mixture and cook until the fish is just cooked through which will take about five minutes. Top with lemon juice and parsley leaves if desired.
Fried Rice
There is no need to get out a ton of kitchen appliances when you can easily make fried rice in your microwave. Simply combine one cup long-grain white rice, 1.5 cups water, one cup leftover vegetables, one medium chopped onion, two slices chopped bacon, one tablespoon oil, one tablespoon ketchup and one tablespoon soy sauce in a microwave-safe bowl. Microwave for 20 minutes and let sit for five. Stir the fried rice and enjoy.
You are likely to never use your stove top or oven again with all the wonderful things that you can make in your microwave. Since you will be using it so often, it may be time to consider getting a new one.
