Stir Fried Summer Veggies ~ A Family Favorite in the Making

Summertime heralds a lot of great veggies in my house.  I’m either growing them or bringing them home from a farmer’s market.  My kids have grown up with lots of veggies in their diets, so they love it when it’s homegrown veggie season.  Summer squash, zucchini, garlic and onions are all favorites, so when I found them at a recent market, it was time to start making our favorite summer dish: Stir Fried Summer Veggies!  This dish is completely versatile, and you can add whatever veggies are in season in your area, or other favorites besides the ones I used.  All you need is a love of veggies, a few of your faves, and a saute pan.  Your taste buds will love it!

What it Takes for Perfect Stir Fried Summer Veggies

The perfect Stir Fried Summer Veggies start with amazingly fresh veggies.  The rules I follow are easy when making my Stir Fried Summer Veggies.  Choosing veggies that we love is first and foremost.  If you don’t love what goes into it, or at least like it a little bit, you probably won’t adore the final dish.  We love summer squash, zucchini, eggplant, red peppers, onions, and garlic.  Also, cutting each type of veggie differently gives the dish some visual appeal.  For instance, slice the zucchini on a bias and the summer squash into Julienne strips.  It gives a beautiful picture to the eye, and it always seems to taste better.  (Or so my kids say.)  I only season mine with a pinch of salt and pepper, and a dusting of Parmesan, but again, add things to suit your tastes.

  2. Great recipe! I eat vegetarian several times a week. I love vegetables of all kinds and love to stir fry. I change things up with different kinds of seasonings. I sometimes like adding a can of diced tomatoes to make it more savory and hearty.
