Millions of Americans rush to fast food restaurants on their way home from work in order to grab something that can be put in their hands and scoffed down in under a half hour. However, some of the most special foods are the ones that take the time to enjoy. Plus, as it turns out, it’s much healthier for our bodies to consume food slowly in order to allow our digestive systems to build up enzymes that will break it down adequately. Chocolate Chip Ice Cream Sandwich Pops

Chocolate Chip Ice Cream Sandwich Pops are simple to make and everyone loves them!   I would recommend serving them immediately once they are unwrapped and dipped.   This recipe comes with a funny story.   I wanted to make these and take some to an ice cream social at church the other night.  It was a disaster!! My idea was to unwrap them, dip them, and place them on wax paper in layers. Well, they melted and stuck to the wax paper.  It was a hot mess!   My FIL took a picture of me trying to clean it up.  I’m sure that picture will end up in the end of the year DVD bloopers.  Even though they weren’t pretty, they were still delicious. 😉

Chocolate Chip Ice Cream Sandwich Pops


  • 1 Box of Mini Ice Cream Sandwiches
  • 1 Bag of Popsicle Sticks
  • 1 Bag of Mini Chocolate Chips


  1. Pour Mini Chocolate Chips onto a plate
  2. Place a popsicle stick half way into the Mini Ice Cream Sandwich
  3. Gently dab the Ice Cream Sandwich into the Mini Chocolate Chips on all sides until well coated
  4. Enjoy!
