Summer is the best time to have a festive gathering for family and friends. Here are some great ideas you may want to include on your menu. These items are quick and easy to make for your summer dinner party. They don’t require a lot of cook time and your guests will really enjoy them!
Citrus Salad with Greek Yogurt Dressing- Makes 1 salad
Ingredients:
1 grapefruit
1 orange
2 tangerines
1 tablespoon of Greek yogurt
1 teaspoon of honey
2-3 pinches of fresh mint
Directions:
Remove the rind from the grapefruit, orange, and tangerines. Slice the fruits into thin slices, keeping the juices. In a bowl, combine the Greek yogurt, citrus juices, and honey until well blended. Spread the dressing over the fruit slices and top with mint.
Grilled Corn Salad- Makes 6 servings
Ingredients:
6 ears of corn, shucked
1/3 cup of mayonnaise
2 tablespoons of lime juice
1 garlic clove, crushed
½ teaspoon of cumin
¼ teaspoon of salt
¾ cup of feta cheese, crumbled
Directions:
Cook the ears of corn in boiling water or on the grill. In a large bowl, combine mayonnaise, lime juice, garlic, cumin, and salt. Remove the kernels of corn from the cobs and add to the bowl of mayonnaise dressing. Toss well to coat and top with feta cheese.
Balsamic Chicken Skewers
Ingredients:
2 chicken breasts, boneless and skinless, cubed
2 cloves of garlic chopped
1 onion, cut into chunks
½ pound of cherry tomatoes
½ cup of balsamic vinegar
½ cup of olive oil
Salt and pepper to taste
Wooden skewers
Directions:
In a bowl, add the cubed chicken, garlic, vinegar, and oil. Toss until the chicken is well-coated. Cover, and refrigerate for 2-3 hours to marinate. Skewer the chicken pieces with the onions and cherry tomatoes. Grill the skewers on both sides for about 10 minutes or until cooked fully.

I think the citrus salad sounds really tasty. I’m not fond of Greek yogurt so I’d have to try maybe regular in it’s place. Thanks for the recipes.
