Strawberry Italian Ice Recipe – A Healthy Cool Summer Dessert!

Strawberry Italian Ice is a simple, yet yummy treat to serve your family – guilt free!  Strawberry Italian Ice can be served for dessert or saved in the freezer for a late night snack . 😉  Here is another delicious, healthy recipe from the Italian Vegan Cookbook!


Strawberry Italian Ice

Strawberry Italian Ice

Store in freezer.


  • 3 C of halved fresh strawberries
  • 3 Tbsp sugar
  • 2 Tbsp fresh squeezed lemon juice
  • 3 C of ice


  1. Using a blender, blend strawberries, sugar, lemon juice, and 2 cups of ice. If too thick, stir with spoon and continue blending.
  2. Then, add 1 cup of ice and blend until smooth.
  3. Pour Strawberry Italian Ice into shallow glass baking dish and cover with foil.
  4. Freeze for 30 minutes. Take out of freezer and scrape sides and bottom of dish until slushy. Recover and freeze for two hours.
