The nice weather has finally arrived, which means summer is just right around the corner. Of course, along with summer comes those sticky, hot days. The last thing you want to do in the heat is slave over a hot stove. So, we hope you enjoy these easy and interesting sandwich ideas that make great summer lunches.
Cheddar Cheese and Apple Sandwich– Makes 4 sandwiches
Ingredients:
1 loaf baguette bread
2 thinly sliced tart apples
4 tablespoons honey mustard
4 slices cheddar cheese
4 slices lettuce
Directions:
Cut the baguette loaf into 4 sections and then cut each section length-wise in half. Spread about 1 tablespoon of honey mustard onto each section of bread. Add the apple slices to each of the sections of bread along with cheddar cheese slices and lettuce slices.
Peanut Butter, Pears and Cream Cheese Sandwich– Makes 4 open sandwiches
Ingredients:
4 slices cinnamon raisin bread, toasted
¼ cup cream cheese
1 tablespoon maple syrup
¼ teaspoon cinnamon
1 small pear, thinly sliced
½ cup crunchy peanut butter
Directions:
In a bowl, combine cream cheese, maple syrup and cinnamon and stir until well blended. Layer each slice of toast onto a plate. You want to spread 1 tablespoon of the cream cheese blend along with 2 tablespoons of crunchy peanut butter onto each slice of toasted bread. Top with thinly sliced pears.
Carrot and Raisin Sandwich– Makes 4 sandwiches
1 carrot, grated
2 tablespoons raisins
1 tablespoon olive oil
½ tablespoon white wine vinegar
6 slices whole wheat bread
3 tablespoons peanut butter
Directions:
In a bowl, mix together the carrot, raisins, olive oil and white wine vinegar. Divide the mixture over three slices of bread and then add the other bread slices to complete the sandwich.
Tomato and Avocado Sandwich– Makes 3 triple decker sandwiches
Ingredients:
9 slices rye bread, toasted
6 tablespoons olive oil mayonnaise
2 medium avocados, sliced
12 cherry tomatoes, sliced
Directions:
Spread some olive oil mayonnaise evenly over all 9 slices of toasted bread. On three of the bread slices, layer some avocado slices and tomato slices. Add a slice of toasted bread to each of the three sandwiches and spread some olive oil mayonnaise. Then, again layer some avocado slices and tomato slices. Add the final three slices of bread to complete the three sandwiches.
