Homemade Ginger Bread Cookie Recipe


I really enjoy baking Homemade Ginger Bread Cookies during the holidays.  The aroma of cinnamon and ginger make the house smell fabulous.  I think you’ll like this recipe, there are only a few simple ingredients in it compared to others.  Plus, they are made with organic brown sugar, a healthier alternative!

If you enjoy baking you will really like the baking mats from Good Cook.  I used the baking mat to mead my dough, roll it out, cut my cookies, and even baked on it!  No need to move them after cutting or spray a cookie sheet.  Use a pastry wheel or cookie cutter to get your desired shape, then slide the baking mat on a cookie sheet and bake!

I was impressed with how fast the mat cooled because when your baking mat cools quickly, your cookies cool quickly!  Quick cooling = Fast Eating! 😉

It is a good idea to keep decorating bottles with multiple tips on hand for decorating.  I used the Sweet Creations Decorating bottles because they come with a round and star tip.

This is such a fun recipe for the whole family!  We had a great time baking these.  My children love to decorate cookies!

Make a craft out of it!  Before baking, punch a small hole in each cookie.  Once cooled and decorated, add a ribbon to create a memorable ornament for the Christmas tree!  I am assuming these were really delicious because my DH ate half of my 2013 Homemade Gingerbread Cookie ornament! 😉  



Homemade Ginger Bread Cookie Recipe

Homemade Ginger Bread Cookie Recipe


  • (1) 3.4 oz package cook and serve butterscotch pudding mix
  • 3/4 cup butter
  • 1/2 cup organic brown sugar
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon


  1. In a medium bowl, mix dry butterscotch pudding mix, butter, and brown sugar until smooth
  2. Stir in the egg
  3. Combine the flour, baking soda, ginger, and cinnamon to the pudding mixture
  4. Flour the surface where you will be cutting to prevent sticking.
  5. Roll dough until approx. 1//8 inch thickness
  6. Cut shapes using a pastry cutter or cookie cutter. *If making ornaments, poke hole in the cookie before baking!
  7. Place non-stick baking mat onto cookie sheet or spray baking sheets with cooking spray
  8. Place cookies 2 inches apart on the baking mat or cookie sheet
  9. Bake for 11 to 12 minutes at 350 degrees.
  10. Allow cookies to cool completely
  11. Decorate with a star or round tip with icing color and flavor that you desire
